Winter Chicken Ceasar Schnitzle
I have a whole bunch of sentiments behind this but I’ll save those for after the recipe!
Shopping List:
4 room temp eggs
2 cloves of garlic, grated
1 1/2 cup panko breadcrumbs
4 skinless & boneless chicken thighs (or small breast) beaten 1 cm thin
3 tbsp olive oil
4 tsp lemon juice (fresh squeezed)
2 tsp Worcheshire Sauce
2 tbs Mayo
Salt & Pepper
Grapeseed oil (for frying)
2 cups greek yogurt
bunch of chives
1 head of endive lettuce
1 head of radicchio lettuce
1 head of frisée lettuce
Marinade: min 30 mins / max 3 hours
Method:
combine all ingredient in a large bowl
beat chicken between 2 pieces of parchment paper until 1 cm thin
put chicken in large bowl of combined ingredients and set in fridge for 30 mins to 3 hours.

1 tbs chives (rough chopped)
1 tsp salt
1 tsp pepper
Dressing:
1 cup yogurt
2 cloves garlic, grated
3 tbsp olive oil
4 tsp lemon juice (fresh queezed)
2 tsp Worcheshire sauce
2 tbs mayo
