Winter Chicken Ceasar Schnitzle

I have a whole bunch of sentiments behind this but I’ll save those for after the recipe!

Shopping List:

  • 4 room temp eggs

  • 2 cloves of garlic, grated

  • 1 1/2 cup panko breadcrumbs

  • 4 skinless & boneless chicken thighs (or small breast) beaten 1 cm thin

  • 3 tbsp olive oil

  • 4 tsp lemon juice (fresh squeezed)

  • 2 tsp Worcheshire Sauce

  • 2 tbs Mayo

  • Salt & Pepper

  • Grapeseed oil (for frying)

  • 2 cups greek yogurt

  • bunch of chives

  • 1 head of endive lettuce

  • 1 head of radicchio lettuce

  • 1 head of frisée lettuce

Marinade: min 30 mins / max 3 hours

Method:

  1. combine all ingredient in a large bowl

  2. beat chicken between 2 pieces of parchment paper until 1 cm thin

  3. put chicken in large bowl of combined ingredients and set in fridge for 30 mins to 3 hours.

  • 1 cup greek yoghurt

  • 2 tbs water

  • 1 tbs chives (rough chopped)

  • 1 tsp salt

  • 1 tsp pepper


Dressing:

  • 1 cup yogurt

  • 2 cloves garlic, grated

  • 3 tbsp olive oil

  • 4 tsp lemon juice (fresh queezed)

  • 2 tsp Worcheshire sauce

  • 2 tbs mayo

  • salt and pepper to taste
